The Jabberwock is extremely well hidden, and its location is only revealed to you with a vague clue, which means it takes quite a lot of effort to track it down. This creature appears as a pair of glowing yellow eyes and nothing more, so you aren't actually looking for a full-sized creature as you might expect. This log blends in with the rest of the environment extremely well. You likely have other logs placed around the biome as decorations since it naturally comes with many. Finding the right one for the Mimsy Were the Borogoves quest is tough because of this. You can only distinguish this log from the regular decorative ones that appear throughout the forest by looking for the Jabberwock's glowing eyes. They can only be seen from the front of the log, so even this small difference isn't always noticeable.
