How to solder a valve with a leaking main water shut off valve

I'm trying to replace an isolation valve on the main water riser to my home. However I'm having an issue where the main isolation valve on my water meter (not in the picture) is leaking water past when closed. This prevents me from being able to solder the new valve on once I cut the old valve out. How should I deal with the water leaking past my water meter shut off? I have a couple ideas: I have heard a trick where I can stuff white bread in the pipe to block the leaking water. The soggy bread will expand and make a temporary seal. That will give me enough time to solder the new valve. After a bit the bread will dissolve. I could use press-fit valves. However I don't have a press fit tool so I'd have to buy one. It looks like press fit tools are minimum $150 for a manual tool, or $300 for a power tool. Even with a manual tool I don't know if the jaws will fit in between the pipe and brick. I could buy some dry ice and place the dry ice upstream of the bad valve to form a temporary freeze plug. I could call a plumber, but I'd like to do it myself. What should I do? Should I try the bread trick? The problem is if the bread trick doesn't work then I'll already have cut the pipe. Then I'll be without water until I can figure something else out (which is likely calling a plumber). The press fit tool is not price competitive compared to a plumber.
