How do I make this look neat?

Hi all. We recently had a new panel installed (to replace the old one) and, well, you know how these things go… We’re left with the image, and I’m at a total loss on how to “make good”. Based in Ontario, It’s one of those older houses where the plasterboard/ plastering is more like concrete, and is over an inch thick in places. My best idea thus far is to just frame it top, bottom, and left, and put some sort of large wooden door on it - but it’d be a big door, and no clearance on the left means I’d struggle to frame that side.
