Help! Best insulation for weird space above wall in basement?

The walls on our partially finished basement do not meet the ceiling, so there is a gap that is open to the foundation/exterior brick wall (see the pictures below). I am in the process of finishing the basement to create a play room/additional living space and want to add insulation to help with temperature control. I should mention we live in Minnesota, so very cold winters and hot humid summers. What is the best insulation to use in this space? I want something that will look nice enough since it is exposed and will be visible. I know it won't look great, but hopefully not too janky. Thanks for the help!
