DIY wet bathroom

We've got 2 young kids and no matter what we do, most days (especially the ones when I'm at work) the bathroom ends up with a pool on the floor. Despite re-caulking, I'm 100% sure that water is getting between the LVP and the subfloor. We have a crawl space and I don't see any subfloor damage, but I won't really know until I tear up the floor and take a look. My main question is: how feasible is it to turn an entire bathroom into a giant wetroom with a tub and a main drain in the center of the bathroom? This would be my most ambitious project to date. This isn't a large space (total house is 1100 sq ft, 3 bedroom, 2 bath), there is a single sink with counter, toilet and what looks like a one-piece shower/tub combo. I've been googling and watching youtube, but the majority of people seem to be mostly concerned with wetroom shower areas rather than an entire bathroom. This has me wondering if there's a reason this isn't common and I just don't understand the complexity of the request.
