Managing a bathroom reno

The situation: We've got a somewhat unexpected bathroom reno in our near future. Our bathroom has lived a long life, 30-40 years judging by the blue bathtub and vintage kohler toilet, and our copper drain pan has finally sprung a leak in the standing shower. I'm moderately handy, though new to home ownership. We've had terrible experiences with GCs in the past. My solution: I'm debating managing the reno process myself. We are keeping the bathroom layout the same, but will need to demo a tile floor/shower and tub surround (drop in tub). No plumbing or electrical will have to be moved. I am fairly certain we should re-drywall the majority of the bathroom, and we've got giant mirrors glued to most of the walls, so I don't think we'd have a choice. I'd prefer to do some of the reno myself (floors, vanity, shower, surround) and then bring in people for larger demo, drywall, then waterproofing, then tiling and reattaching plumbing using my trusted plumber. The question: Am I insane to think I can manage this? We have flexibility with time (I work from home) and space (we have three additional bathrooms). I have acquired a few trusted people that i'd prefer to work with rather than the randos the GC brings in. Or should I just suck it up and try and find a better GC than I've dealt with in the past?
