Your workers allow you set up systems that take care of all the important processes on their own. However, the demand of certain products will change, and you'll have to make changes to the assigned work for your employees. You can reassign workers just as easily as you can assign them in the first place. You'll need the management clipboard (press 9 to activate it). Do the same once again, and you'll be able to assign the worker to a new task. You can also assign them to the older task if you want. If you find that any of your worker is still using an old cabinet to store items on it, the only option is to sell the cabinet. This will allow you to assign your worker to a new storage space. I believe that it could be a bug, but this workaround will make your life easier.
