How to fix / is this a bad idea?

While cleaning my gutters I decided to walk the roof for fun. While on. The ridge I noticed the crown and two bricks on my chimney have failed. The crown is in 3 parts with two that are loose and the bricks are done for. My thought is to knock/chisel the rest of the crown off, clean all the loose bits off, and then use something like Quikrete Polymer Modified Structural Repair Concrete to fill in the sections of missing brick and make a new crown with it.
