No hot water when not in use for long periods. Brand new hot water tank.

I installed the heater myself. A gas unit so it was an easy swap out. The water DOES get hot. It functions fine and is usable 95% of the time. When it's not used for half a day the water is only warm. If I pour a bath for the kids and the water isn't hot, the tap will be pointed to 100% hot. Once the water cools off in 10-15 mins and they start to get cold and when I fill up the tub again, voila, the water is back to being hot enough. I'm am no expert, but my guess is that the thermometer is set too low, so the water cools off before the thermometer tells the burners its too cold. We have two little kids so the temp is not cranked up (it was set to the manufacturers recommended temp, i just turned it up to the next level). My wife likes excruciatingly hot showers so this is unacceptable to her, but it's warm enough for a normal person to shower, but disappointing because it's maybe 2 months old.
