Replacing water heater gas valve - can I use flex pipe?

Disclaimer: I'm a relatively handy person, but absolutely not a pro; please forgive/correct any mistakes I make in describing the situation. I think I need to replace my gas valve; the pilot lights but immediately goes out when I release the button. I've already replaced the burner unit, assuming it was a sensor problem. Currently the setup is all rigid pipe to the valve. At the top of the pic is the gas shutoff, then a dielectric union (I think?), additional connections, then the valve. I'd like to simplify the valve replacement and use a flexible pipe, either from the shutoff or from the union, to the new gas valve.
